Geboren en getogen in Sevilla, is Raul, zonder Engels te spreken, naar Londen verhuisd om zijn horizon te verbreden. Zijn eerste baan was in de keuken, vanuit waar hij doorstroomde naar het sommeliersvak. Zijn ambitie hierin bracht hem verder naar topgastronomie in London en de VS, en ook werd hij de aanvoerder van het Spaanse blindproef team en wonnen zij samen meerdere competities.\u003c\/p\u003e\n\u003cp\u003eHierna verhuisde hij naar Australië, waar hij werk in restaurants combineerde met consultancy opdrachten en ook studeerde voor twee diploma’s: als eerste Viticulture aan de Charles Sturt University, Waga Waga in New South Wales, en als tweede Wine Sciences and Oenology aan de Melbourne University. Bij Melbourne University werd hij uiteindelijk ook hoogleraar van het vak Sensory Analysis. In Australië is hij ook dan ook gegrepen door het wijnmaken en hierdoor is hij ook uiteindelijk bij Domaine Dujac terechtgekomen in Morey-Saint-Denis, waar hij een tijd de keldermeester is geweest.\u003c\/p\u003e\n\u003cp\u003eNu is Raúl terugverhuisd naar thuis, dichter bij zijn ouders, maar vooral om wijn te maken die dichtbij zijn hart ligt. In het land van Sherry zag hij zijn kans om iets helemaal anders te doen en al zijn ervaring te storten op het maken van onversterkte wijnen die op een nieuwe manier de grootsheid van het gebied kunnen vertonen. Raúl werkt met wijngaarden in Jerez, Sanlucar, Puerto de Santa Maria, en Trebujena, met wijngaarden van gevarieerde leeftijden hoog boven het zeeniveau. Hij werkt met lokale druiven zoals Palomino en Tintilla, maar ook experimenteert hij met Chardonnay, Pinot Noir, en Syrah.\u003c\/p\u003e\n\u003cp\u003eHet wijnmaken is uiterst precies en elke wijn heeft zijn eigen unieke toepassingen, van rijping op oude Sherry vaten, wijnen onder flor, of wijnen in Portugese amphora, Raúl zit geen moment stil.\u003c\/p\u003e\n\u003cp\u003eBoven alle techniek, prestige, en opmaak van het huis, vinden wij vooral dat deze wijnen voor ons samengevat kunnen worden door “levendigheid en plezier”, boven alles zijn dit serieuze wijnen die zichzelf niet te serieus
