On the plateau north of Chablis, Sebastien Christophe cultivates his grapes for Petit Chablis. The soil on top of this plateau consists of the so-called Portlandian soil. This is clearly less special than the much rarer Kimmeridgian soil from which the "Grande" Chablis originates. Nevertheless, Sebastien's Petit Chablis is a very beautiful wine that certainly offers the crisp, mineral taste of Chablis. Christophe's Petit Chablis is among the favourites of almost all journalists. A very good price-quality ratio.

Sebastien Christophe is located on top of the Côte (plateau of Fyé) behind the Grand Cru cluster, near the hamlet of Rameau. In many ways, he is a 'self-made man'. Starting with a small parcel of vineyards classified as Petit Chablis, he patiently worked his way up, buying and leasing small plots of land, etc. His winery has now grown into a mature business, and he produces a series of wines, from Petit Chablis to communal A.C.s, and even some Premier Crus such as Fourchaume and Montée de Tonnerre.
He currently owns about 5 hectares and cultivates this area using the 'lutte raisonnée' method. He primarily uses stainless steel in the cellar, but also used wood for his 1er Crus.
Thanks to low yields, extensive vineyard work, and an innate talent for winemaking, these terroir-driven wines continue to impress.
