The Sancerre wine region is considered one of the best areas for Sauvignon Blanc in the world. This wine proves it: an expressive nose with fifty shades of green (from Granny Smith to spring grass), citrus, papaya, and even a hint of jasmine. A slender drink, with that invigorating spicy freshness typical of Sauvignon. However, it has relatively good body and texture, as Simon Chotard harvests relatively late and allows the wine to age for a long time on the fine lees.

Chotard manages his small 9 hectares from Reigny near Crézancy and Sancerre. 80% is Sauvignon, 20% Pinot Noir. Vines up to 60 years old. Almost organic cultivation (organic fertilization, no insecticides).
Respect for the clay/limestone terroir is essential; the white Sancerre ages for 8 months "sur ses lies" annually, consistently producing a wine with great substance. The red wines are delicate and supple; Pinot Noir of the fine and fruity kind.
