The Sancerre wine region is considered one of the best areas for Sauvignon Blanc in the world. This wine proves it: an expressive nose with fifty shades of green (from Granny Smith to spring grass), citrus, papaya, and even a hint of jasmine. A slender drink, with that uplifting, spicy freshness typical of Sauvignon. However, it has relatively a lot of body and texture, because Simon Chotard harvests relatively late and allows the wine to mature for a long time on the fine lees.

Chotard manages his small 9 hectares from Reigny near Crézancy and Sancerre. 80% is Sauvignon, 20% Pinot Noir. Vines up to 60 years old. Almost organic cultivation (organic fertilization, no insecticides).

Respect for the clay/limestone terroir is essential; the white Sancerre ages for 8 months "sur ses lies" annually, consistently producing a wine with great substance. The red wines are delicate and supple; Pinot Noir of the fine and fruity kind.
